About this course
The Certified Sake Sommelier is a fantastic way to expand both your sake knowledge and sommelier skills. The Certified Sake Sommelier is accessible to both trained professionals and sake connoisseurs alike. The course provides an unbeatable level of sake education and practical knowledge - whether you are working with customers in restaurants, distributing products to clients, or impressing friends over dinner!
This is a 3 days course covers the broader aspects of the sake industry.
Day 1:
Duration: Approximately 5 hours
• Introduction to Sake: Learn about the rich history of sake, its cultural significance, and the challenges faced by the Japanese hospitality industry in promoting sake.
• Understanding Sake: Explore what makes sake unique, including its production methods, ingredients, and key characteristics that distinguish it from other alcoholic beverages.
• Sake Production Part I: Dive into the first part of sake production, covering topics such as rice preparation, fermentation, and the role of yeast in the process.
• Sake Culture: Gain insights into the cultural aspects of sake, including its role in traditional Japanese ceremonies and celebrations.
• Sake Storage and Quality Control: Understand the importance of proper sake storage and quality control practices in restaurants and hospitality establishments.
• Sake Tasting Part 1: Engage in a guided tasting session to explore various styles of sake.
Day 2 & 3:
Duration: Approximately 5 hours
• Sake Tasting Part 2 & Sake Production Part 2: Continue the guided tasting session, exploring additional sake styles and delving deeper into the sake production process.
Focus on topics such as yeast starters (Yamahai, Kimoto), sake rice specificity (Yamadanishiki), and the concept of sake regionality.
• Unclassified Sake: Learn about sake that does not fall into traditional categories, understanding their unique characteristics and taste profiles.
• Food and sake pairing
• Engage in a hands-on exercise that explores the world of Umami and food matching.
• Develop the ability to understand and interpret sake labels.
• Special Sake:Explore unique and special types of sake, understanding their characteristics and taste profiles. Discuss how different factors, such as temperature contrast, can affect the flavour of sake.
• Overview Day 1 & Day 2
• Classroom Q& A session
• Exam:Prepare for the final exam by revisiting key concepts and reviewing the course
content.
Final Exam:
• Take the final exam, which consists of 40-multiple-choice questions, to assess the knowledge and understanding gained throughout the course.
• Sake Tasting Exam-20mins
All students who pass will receive their Certified Sake Sommelier qualification – recognised globally in the Food & Beverage industry for its high standards; and a SSA sommelier lapel pin.

Entry Requirements
There are no specific requirements for this Sake Sommelier qualification, but the student must be of legal drinking age in order to participate in the sake tasting.
Price includes the study guide, class, printed materials, tasting, equipment to be used during the class, exam, certificate and lapel pin (once passed the examination) and plenty of fun interactive activities with our Sake Educator: Giovanni Depergola.
